Chicken Enchiladas from Tom &

2 Chicken breasts
1 can cr. mushroom soup
1 cup milk
1 sm. container sour cream
1 sm. can of green chilies
6 flour tortillas
grated cheese- cheddar or jack or both
Boil chicken and cut up in pieces. Mix soup, milk, sour cream and
chilies in sauce pan. microwave tortillas. Take tortilla and put
chicken in center. Add 1/2 cup sauce, top with cheese and roll it
(place in 9X13) Continue till tortillas are gone. Tope with rest of
sauce and the rest of the cheese. 20 minutes 350 degrees.
Tom's and my favorite lasagna recipe.
1 16 oz package lasagna
1 lb. ground beef
1 14 oz jar spaghetti sauce (with mushrooms)
2 6 oz cans tomato paste
1 cup water
2 tsp. Italian seasoning
garlic (opt)
24 oz cottage cheese, small curd
1/4 cup parmesan cheese, divided
2 T minced parsley
8 oz shredded mozzarella cheese
Cook lasagna. (while lasagna is cooking) brown meat. add spaghetti
sauce, tomato paste, water, Italian seasoning, and garlic if desired.
Simmer 10-15 minutes. Drain any excess liquid from cottage cheese.
Combine cottage cheese, parsley and 1/2 parmesan. Spread one cup sauce on bottom of pan
(9x13). Arrange 4 pieces of lasagna lengthwise over sauce, overlapping edges. Spread
1/3 cottage cheese, 1 cup sauce, and 1/2 cup mozzarella cheese over pasta. Repeat layers
twice. Top with layer of pasta and remaining sauce, mozzarella, and parmesan cheese.
Bake in 350 oven for 30 minutes. Let stand 5-10 minutes to set. Makes 12- 3' servings.
Chicken Broccoli serve with rice
1 pkg. broccoli
1 chicken, or equiv.
mix- 3/4 cup Mayo, 1 cup grated cheese, 1 can cr. chicken or mush soup,
1/2 t lemon juice Boil and bone chicken, or boil chicken breasts and cut up. put in
bottom of pan (9x13) add cooked broccoli, cover with sauce. Bake 350
for 30 minutes.
No- bake cookies
Boil for one minute- 2 cups sugar, 1 cube butter, 1/2 cup milk, 4 T
cocoa remove from heat add- 3 cups oatmeal, 1/2 cup Peanut Butter, 1 tsp. vanilla mix
well, stir spoonfuls onto waxed paper
Tom's casserole (as it's known in Southern California, to family and
friends)
1 lb. ground beef
1 large onion, sliced
3 potatoes, peeled and sliced
2 carrots, sliced
1 can corn
1 can cream of chicken soup
1 cup sour cream
1/2 c. milk
cheese grated
1 tsp. salt
pepper
Brown hamburger and onions in frying pan. Drain and place in casserole dish.
Arrange potato slices, carrot slices, and drained can of corn on top of the meat. Mix
soup, sour cream, milk, and salt and pepper, pour over potatoes, carrots, etc. Sprinkle
with cheese. Bake, uncovered, for about 1 1/2 to 2 hrs in a 350 oven.
White Enchiladas
10 flour tortillas
1 1/2 lbs. hamburger
1 small can refried beans
1 8 oz can tomato sauce
1 pkg. taco seasoning
1 can cream mushroom soup
1 c sour cream
3/4 cup water
Brown hamburger, drain grease, add tomato sauce, taco seasoning, and
refried beans. roll meat mixture in tortillas and place in 9x13 pan.
Mix sour cream, water and cr. mushroom soup and pour over rolled
tortillas. bake at 350 for 10 minutes, top with grated cheddar cheese.
Great to make ahead and refrigerate, then heat.
Lemon Dessert
20 graham cracker squares
1/4 cup sugar
1/4 cup margarine
2 cans condensed milk
2 eggs
3/4 to 1 c lemon juice
whipping cream, whipped to light peaks
Crush graham crackers, and by hand, mix together with sugar and margarine.
Press into 9x13 pan, reserving 1/4 cup of mixture. Beat together
milk, eggs and lemon juice. Pour beaten milk mixture over crust. Cover with whipped cream.
Sprinkle with 1/4 cup crumb mixture. Refrigerate 2 hours.
Sweet Potato Casserole from
Glennis aka Sugarplum
3 cups mashed sweet potatoes
1 cup sugar
2 eggs
1 tsp. vanilla
1/2 to 3/4 cup sweet milk
1/2 cup margarine-melted
Mix all ingredients together. Place in a buttered casserole dish.
Mix together and sprinkle on top:
1 cup brown sugar-packed
1 cup chopped pecans
1/3 cup flour
1/3 cup margarine-melted
Bake at 350 for about 1 hour
